Yes, they're both "we". I'd leave them there.

To me, "We don't regret (at all) that we hardly ate anything" is not a great match for "We never repent having eaten too little." The first suggests relevance to a single situation, while the presence of "never" in the second suggests a general, almost philosophical statement: "As a rule, {we never feel / one never feels} sorry about having eaten too little." If the meaning of the Japanese is close to the former sentence, I believe we could benefit from some linking to new English translations, and possibly some unlinking, too.

We never repent having eaten too little.
(私達は)ほとんど食べなかったことを決して後悔(など)していない。
(我々は)ほとんど食べなかった事を決して残念に思って(はい)ない。

They don't feel so odd to me, and I don't think it's necessarily an un-match the English. As you say, if I try to express it more like a rule, I would suggest the following change, but I'm not sure if the English and tense match.

ほとんど食べないことを決して後悔はしない。
ほとんど食べない事を決して残念だとは思わない。

Also, since this sentence is from the Tanaka Corpus, I think it's a good idea to keep the changes to a minimum and supplement it by adding the following sentence.

食べ物をほとんど口にしないことを後悔することはありません。

In any case, do you adopt this English sentence? If you adopt, I'll try adjusting the Japanese sentence by asking everyone.

Interesting that it's a quotation. It would be nice to have a single good Japanese translation of it.
