Wozu sagt man das くる? Warum nicht nur いきます?
Oder ist es normal zu sagen "ich gehe Bergsteigen und komme wieder zurück"

本来「行って戻ってくる」ということなのですが、「なんとか gehen」というときによく「～てくる」という言い方を使います。別に戻ってくるということを強調しているわけではないです。
