The Japanese sentence is a proverb and means becoming more cautious than necessary.

We have a similar link. This link may be easier for you to understand than my explanation.

JackRoberts says it's a literal translation. (see [#11813684])

My (poor) English would say:
Since being scalded by the hot soup, because avoid repeating the same do it again, I'm being overcautious that I blow even on my cold salad before eating it.

I think your suggestion means the same as this, so I think it's good.
