Quick question...

If because I used 'san' so it needs to be 'okyakusan' right? But I can also say 'kyaku' which is less polite?

Yes, it's right. We don't say 客さん.
We say お客さん or お客 or 客.
But I'm not sure if 客 is less polite, because for example in news, they say 客.
