"Estoy aburrido" would be I am (a kind of a) boring (man) ?

Yes, but that's not the meaning of the English sentence.
It phrases, that anything is boring to me => Me aburro.

In fact both are right, if you wanted to say "I'm a boring man" in Spanish would be "soy aburrido", if you say "estoy aburrido" would mean "I'm bored".
