It should be: " Do you ever have* a snack between meals."
Or "Do you ever snack between meals."
In the first case "snack" is a noun, in the second case a verb.
The original sentence was correct: "Do you ever happen to snack between meals?"
The word "happen" gives it a nuance of something unplanned, unforeseen. It means "Do you ever catch yourself snacking between meals."
