Either it is a command to write the word, "Spanish," and, "Spanish," should be in quotes, or the particle, "in," should be inserted: "Write in Spanish."
These would be better:
Write in Spanish.
Write some Spanish.
but I don't think
Write Spanish.
is wrong, any more than "Write poetry" or "Speak English" is.
