As a French, the sentence sounds a bit weird, but I'm not sure, Trang, zmoo, can can you confirm (or any french native :P)?

It does sound weird. I would add articles.
=> L'oxygène et l'hydrogène forment l'eau.

hmmm now I've cleared my mind, I think I would rather use the passive form "L'eau est formé d'hydrogènes et d'oxygènes"

Yes, I agree, that sounds more natural than "L'oxygène et l'hydrogène forment l'eau".

Except it should be "L'eau est formée d'hydrogène et d'oxygène".
=> formée with E at the end
=> no S for the atoms
