Unless this is meant to be funny, "terracotta potatoes" has no meaning to me. It is trivially true that an object made of baked clay is not easily digestible, but neither are the Elgin Marbles or the statue of David in Florence.

Is it possible that Scott meant, for example, "baked potatoes"? I don't know about the relative digestibility of boiled versus baked potatoes, but it is at least imaginable that the skins become somewhat toughened in the baking process and may thereby contribute a bit more fibre to the diet.

Oops. I see this is in fact a French pun by Alphonse Allais. It loses something in the translation to English.
