I'd like to recommend two write "Two is ..."

Take a look now.

I don't think "Two" should be wrapped in quotes. Two is a number, not a nickname for a number.

Should I change to 2 instead of "Two"?

No, I think you should spell it out.

It's a convention in English not to begin a sentence with a numeral, since a numeral cannot be capitalized. It's also a convention to spell out numbers that represent one-digit numerals.
