Am I missing something, or are Cantonese transliterations currently uneditable? Also, what can I do to change the default transliterations of certain words or characters? Some of them are wrong (or highly unusual)...

It's currently uneditable. Only Japanese furigana and Chinese pinyin are editable. The rest is read-only, but can be made editable, if there is a desire from users and contributions to make the transcriptions/transliterations of a certain language editable. Of course, before that, we would need to make sure there is no (easy) way to automatically generate perfect transliterations.

To fix the default Cantonese transliterations of certain words, I personally don't know and unfortunately don't have much time to look into this. To figure this out you would need to have some programming knowledge and check the source code of the tool we're using to generate these transliterations: https://github.com/allan-simon/sinoparserd
