In American English, we'd more likely say "dig up the potatoes", so this sounds wrong to me.

[#3339977] Let's unearth the onions. (8011794255)
[#3339979] Let's unearth the gingers. (8011794255)
- ginger is usually a non-countable noun
[#3339978] Let's unearth the garlics. (8011794255)
- garlic, too.
[#3339976] Let's unearth the potatoes. (8011794255)
