It's the shorter version of “来週の月と火と連休です”
for example, 今日と雨になります。 is ungrammatical.
But we can say 今日と明日と雨になります。and the redundant と can be omitted.
今日明日と雨になります。It will rain today and tomorrow.
今日明日明後日と雨になります。
今日明日明後日明明後日と雨になります。…

The 連休 is only Monday and Tuesday.
In this sentence the と is not a conjunction, but a case particle that denotes a continuous state.
"来週の月火" is a continuous period of time, so it can be changed like "延々と連休です。"
