おっしゃる通りです。私もこの場合は「うまい」と書きます。
そして、ご存じのように常用漢字ではないだけで、間違いでもなさそうです。

I perhaps should have mentioned in my original comment what prompted me to make this suggestion. I was adjusting the JMdict indices on this sentence when I noticed that 行く旨く was tagged (in JMdict) as a "rare kanji form". I'm not opposed to the use of non-jōyō kanji in Tanaka sentences but I thought it might be better to to use kana in this instance given the relative rarity of 旨い.

@JimBreen, how do you feel about this? I see that there are 26 Tanaka sentences that contain 旨く行く. None of the major JE dictionaries use 旨い/旨く in their example sentences.

I see there are about 180 sentences using various forms of 旨く行く. Most them use only kana. Given that the 旨く form is relatively rare, 26 is probably a bit high. I think many of the sentences came from textbooks which can be a bit old-fashioned.

On balance I think it would be best if most of the 旨く versions were converted to use kana.
