I would suspect that a dash would be more appropriate than the 2nd comma.

I changed it because using the dash before a gerund seemed unnatural to me, and also because it used the wrong type of dash (a hyphen instead of an em dash). Maybe if the sentence were rearranged so that two commas/comma and a dash weren't necessary, such as:

I was really into cola for a while, drinking it every day.

It would both sound natural and retain the same meaning.

I think the comma is better than a dash here. I like the example you've given above in which you've taken out the first comma, but the sentence as is is fine, I think.
