https://en.m.wiktionary.org/wiki/kummoinen#Finnish
"kummoinen (comparative kummoisempi, superlative kummoisin)
(colloquial) mediocre, not very good"
But here it is used with a negative, to mean "not so delicious". Is Wiktionary missing something?
Yes, it's missing the fact that this adjective can only be used in negative. You can't say for example "Ruoka oli kummoista", it does not mean anything. The same goes with the synonym listed in Wiktionary, 'hääppöinen'. "Ruoka ei ollut kovin hääppöistä" is OK, but "Ruoka oli hääppöistä" is not used.
Thanks, that was about what I was suspecting.
