*euren

"Ihr" als anrede für eine einzelne person war früher die höflichkeits- und ehrerbietungsform gegenüber adligen herrschern etc. insofern wäre ein entsprechender tag wohl sinnvoll.

Is it a group of people that have one pencil, or can you say it like that in German when you tell a group of people to put their pencils down? Isn't euer always plural?

I think both interpretions are possible. The first is undoubtedly correct (though a bit improbable).
German isn't very strict in using the plural form of things of which each of the addressed persons has one single.

Ok. I interpreted it as a person telling a group of people to put their pencils down. If interpreted in the other sense, it would be: "Lägg ner er penna." Maybe some team building event with a very large pencil? 😀
