I wanted an example sentence using 口を尖らす/口を尖らせる.

I think it's more common to write "尖らせる" with the kanji.

Some dictionaries seem to make it a rule to use only 常用漢字 and "尖" is not one of them, but some non-常用漢字 are actually quite often used in everyday life.

Yes, I extracted that example from a dictionary, and I agree it probably used kana because 尖 is not a 常用漢字.
