Well in a conversation I thought you would usually omit 私は but I guess in this case it's better to state.

You study Japanese very well^^
But for me, It seems strange that many foreigners want to write Japanese sentence without subject or pronoun.
Actually we often omit them, but it depends on the situation of the moment.
And you said "in a conversation", but we can't know if this sentence is a part of a conversation at all.
If it was like this:
「苦手な飲み物はある?」「コーヒーが好きじゃない。」
Now we can understand its a conversation between two persons, so it's no problem without subjects.

I'm sorry because my English is so poor.
I wish you'll understnd what I mean.
And this is my opinion, so maybe there are other Japanese different opinions of course.
