Personally, I think I would use single quotes instead of underscores.
In plain-text applications, including plain-text e-mails, where emphasis markup is not possible, the desired emphasis is often indicated by surrounding words with underscore characters. For example, "You must use an _emulsion_ paint on the ceiling". (https://en.wikipedia.org/wiki/Underscore)
I use this a fair bit so am ok having it in the examples, I am not sure if there is a policy for markup, ...
I wouldn't use single quotes.
I think dropping the underscores would be OK, though, and that the feeling of the emphasis would still be present.
"Certainly if someone is that beautiful you'd draw back from approaching her." "Thought you'd agree."
