It is grammatically correct, but it may not mean what is intended. It suggests that the speaker is capable of speaking Japanese, but chooses not to, whereas "I do not speak Japanese" ("I am not capable of speaking Japanese") is what is more commonly meant. I was under the impression that the linked Spanish "Yo no hablo japonés" means something more like "I don't speak Japanese."
