
Fixed. Sorry, someone mentioned this book the other day: Gödel, Escher, Bach: An Eternal Golden Braid, also known as GEB, is a 1979 book by Douglas Hofstadter. I think it had a lot of material on self-referencing sentences, etc.

I find the original sentence bizarre, but in a fascinating way. Kind of like a mashing of "I'm so hungry I could eat a horse" with "I'll eat my hat" and also self-referencing.
I mean, as a learner of the English language, I find it very useful to meditate on sentences like
* Let's not beat around the dead horse.
* Rome wasn’t burnt in a day.
* Tomato potato.
* It's not rocket surgery.
It's mildly satisfying being able to understand the reference in those "malaphors".
