"Year" and "holiDAY" are dissonant: I should say, "If every day were a holiday" or "If vacation lasted the whole year."
The source of the trouble, I think, is the British usage of "holiday" for "vacation," as in "I'm on holiday next month." Note the absence of article. On that model, you would say, "If the whole year were holiday."
