
Don't we say: 'What a lovely weather!' ??

"Weather" is uncountable. So as a litmus test: One can't say "one weather, two weather(s)[...]". This sentence was used in my textbook to illustrate usage of the word "weather" in English compared with the countable "vær" in Norwegian.

Could a native speaker(s) confirm if this sentence is likely to ever be used? If it sounds unnatural, could you please suggest a natural sentence where the uncountability of the noun is preserved?

Native English speaker confirming "What lovely weather!" is correct.
Although, we could also say "What a lovely day it is today!" The article goes with 'day' as a count noun.
