Personnellement, je n'ai jamais entendu "herbe-aux-chats" en France, et je viens de demander à une professeur de Lettres belge, et elle aussi ne connaît que "herbe à chats"...
Je suis donc surpris et j'attends d'autres avis. Il est possible qu'on dise "herbe-aux-chats" dans des régions dont je ne suis pas familier...
