Though I know little about bars, I think I can give you some information.

- They say バーテン is a discriminatory word compounded from バー and フーテン. It can be offensive and you should avoid calling bartenders like that.

I think the following expressions work.

バーテンダーさん (calling someone by the job without さん sounds strange and is perhaps rude)
マスター/ママ (if he or she is a manager)
おにいさん/おねえさん
すみません(rather polite)

- ～を必要としている is an objective expression and we don't say so for asking someone to satisfy our personal needs.

I suggest these, more polite to less.

お酒/飲み物/一杯 もらえますか。
お酒/飲み物/一杯 ください。
お酒/飲み物/一杯 ちょうだい。
酒/飲み物/一杯 くれ。

I was doubtful myself about my translation, so your comments are welcome!
As for バーテン, I thought it was just short for バーテンダー... I didn't imagine it sounded offensive. I also changed the rest of the sentence according to your suggestions.
