I think the grammar is fine, but it doesn't sound natural to me. Here are some sentences which sound good.

漢字を学ばずに日本語を勉強することはできない。
漢字を学ばすに日本語を勉強するのは不可能だ。
漢字を学ばないで日本語の勉強はできない。
漢字を学ばないで日本語を勉強するのは無理な話だ。
