I don't this should be linked to "That's a piece of pie", but possibly to "This is a piece of cake".

Yes. Idioms are tricky. English has both of these forms, and they mean essentially the same thing, but their syntax is different:

It's as easy as pie. AND It's a piece of cake.

I think that, at least in U.S. and Canadian English, we'd only say, "That's a piece of pie" when pointing out a slice of pie to one's friend in a cafeteria line-up. This would not have any extended context of indicating that a task were extremelyt simple to accomplish.
