Another possibility would be "seasoned". That's more common, and could simply mean that he has sailed a lot and is good at it, rather than that he has literally been hardened by the weather (though the literal meaning is the source of the original metaphor).

I'm used to season a meal. ;-) But just now I've learnt that seasoned can be translated in quite different ways:
