¿No debería ser toda la frase en plural?

Sí, podría ser eso también perfectamente pero igualmente se usa "la hoja" como un incontable (como una especie de materia más que como una serie de cosas individuales), de modo que sería el sujeto de "caer" y, por lo tanto este también iría en singular. Convendría que añadieras la versión de todos los plurales que comentas porque es quizá más común.
