Il y a une différence entre:
- elle s'est couverte
et
- elle s'est couvert les mains

En fait, dans la phrase ci-dessus, "bouché" annonce un complément d'objet direct placé après. La phrase signifie littéralement -> Elle a bouché ses oreilles avec les mains. Donc "bouché" ne peut pas s'accorder avec "elle".

Sur le principe je suis d'accord avec ta remarque, mais pas dans cette phrase-là. Elle n'a pas bouché elle-même, mais ses oreilles, et comme le complément d'objet directe est placé après, il n'y a pas d'accord.
