No, it shouldn't. The sentence is both grammatically correct and an accurate translation of the English.

Halfdan, since the sentence is just "I didn't give up" the verb is not effecting any noun but rather just the pronoun. If the sentence was like "I didn't give up all hope", you would say "Ég gaf ekki upp alla von". I've never in my 28 years heard anyone say "Ég gaf ekki upp" when expressing refusal to surrender to a certain task at hand.
