Ich sehe das Problem nach etwas Nachschlagen wie folgt:
Hier wirkt der Terminus "einzig" intensivierend bei einem Adjektiv.
Also: "Veränderung ist das einzig konstante [Etwas]."
Sonst müsste es heißen: "V. ist DIE einzigE Konstante."

Es ist ein (nicht nur der Form nach) substantiviertes Adjektiv, vgl. auch

Dort ist als Beispiel „das einzig Richtige“ aufgeführt.

Ha, es gibt ja noch ein weiteres "einzig". Das ist mir gar nicht aufgefallen. Ich hatte nur die Adj.-Form gefunden, aber du hast mir nun auch die Adv.-Form unter die Nase gehalten ...
