couple of swans -> swan couple / pair of swans (?)

Two animals can also be a couple if they are "husband" and "wife", aren't they?

The issue is not the fact that the animate beings are animals rather than humans. The issue is that "a couple of" is predominantly used to mean "a few" rather than "a pair". You'd have the same issue with "A gorgeous couple of humans swam on the lake."
For what it's worth, "were swimming" would probably be better than "swam" here (and would match the French better).
