I'm trying to translate this sentence into German and Esperanto, but it's not clear to me what a "substitute writer" is.

When I put the Chinese sentence through the Google translator, the word "ghostwriter" is used. Here's the definition from the concise Oxford:

ghostwriter
■ noun a person employed to write material for another person, who is the named author.

Ghostwriter implies it's some sort of professional situation, for writing a book. This is just a daughter-in-law writing some letters for her husband's mother. It doesn't have to be translated as a noun here - it could be rendered as something like "stoop to writing letters for your mother."
