Si aprendemos sobre tanto la Roma antigua como la Grecia antigua, ¿cómo se escribe de forma breve? ¿"la Roma y la Grecia antiguas"?

Efectivamente, según está redactada esta frase: "Aprendemos sobre la Roma antigua y Grecia.", aunque es correcta gramaticalmente, no sitúa en el mismo nivel los términos "Roma" y "Grecia".
Si no se habla de topónimos, sino que lo que se pretende es referirse a las antiguas civilizaciones griega y romana, expresiones más adecuadas serían:
-Aprendemos sobre las antiguas Roma y Grecia.
-Aprendemos sobre Roma y Grecia antiguas.
-Aprendemos sobre Grecia y Roma antiguas.
Si bien, generalmente, esto se expresa de forma más sencilla:
-Aprendemos sobre Roma y Grecia.
Cualquier estudiante asume, al oír esta oración, que se refiere a la cultura grecorromana; es decir, al legado cultural de ambos pueblos y no ciudades ni países.
