In my university Technical English class, we students were taught not to use "this," "that," "these," and "those" without the accompanying noun after them. So, if you want to be "technical," you can write "That feat" or "That event" or similar. It's just a suggestion. If you just want to make it sound as though you are speaking naturally, then "That" by itself is probably all right.

Maybe there should be a lake here. But I think it's OK.

Yes, it is indeed.
In my perception "That's really surprising" is really convenient and the central element of the whole situation, which IS completely absurd. More precisely, these words demonstrate the absurdity of the view the speaking person adheres to. He or she is apparently arrived at a mountain top, but is still reluctant to accept this fact, because of his or her faithful devotion to the map (or let it be an electronical navigation device if you like it more up to date). Well, we are free to assume that that person's ability to read a map may be inversely proportional to the level of ability he or she is firmly convinced to have. Take all this together, and this shouldn't only make sense but could almost certainly be played by Monty Python, if they haven't already done so.
