I'm unsure about this, but don't the rules go お + masu stem + する

And the masu stem of 話す is 話し, not 話

So, お話しできたら

これは動詞「話す」の謙譲語ではなくて、美化語の名詞「お話」のつもりです。

謙譲語の「お話しする」の場合、普通の会話ではなくて一方的に語りかける感じがします。ぼくだけかもしれませんが。

Hm, yes. If it's a noun, there's an omitted が after.

I'm a bit confused about these things. I don't run much into 謙譲語

Also, as CK commented, my IME recommends in this order:

1) お話できたら
2) お話しできたら
3) おはなしできたら
4) お放しできたら
5) お離しできたら
6) オハナシデキタラ

So I figured people might just pick the first one since it's pronounced the same anyway.

「話」に関しては、動詞は「話(はな)す」、名詞は「話(はなし)」ということになっているはずです。

本則 活用のある語から転じた名詞及び活用のある語に「さ」,「み」,「げ」などの接尾語が付いて名詞になったものは,もとの語の送り仮名の付け方によって送る。
例外 次の語は,送り仮名を付けない。

もちろん送り仮名に決まりがなかった戦前は「先生の話しを聞く」のような表記も見られますし、こういう書き方をする人は増えてきているような気もします。ただぼく自身が区別していますので、ここでは規範に従っておきます。
