I think you'd call him either Galileo Galilei or just Galileo. You wouldn't say da Vinci, either. ☺

On the contrary, I wouldn't call him Galileo since I don't know him personally :)

Same in Hebrew: you either call him Galileo Galilei or simply Galileo.
